Simple Mills: The Best Gluten Free Bread EVER
In my quest to eat healthier, I have turned to a lot of almond flour recipes. Because I'm a busy mom who likes to keep things simple, I was thrilled to learn that one company, Simple Mills, has produced some quick and easy-to-use mixes that utilize almond flour. I recently tried their Artisan Bread Mix. This fabulous mix can be used to make flatbread, dinner rolls, or sandwich bread. All of the recipes can be found on the back of the product's box. The only ingredients needed are eggs, water, oil, and apple cider vinegar--score! Additionally, there are only 11 grams of carbs per serving, 5 grams of protein per serving, and this product is a "Non-GMO Project" verified food item. So, those things alone sold me on this bread, but I wasn't prepared for what would happen after I actually MADE the bread...
Not only was this bread super easy to make, but it tasted absolutely incredible! I decided to make the flatbread. One box made two flatbreads. I love that the bread fit perfectly on one of my smaller sized stones. I added rosemary to one of the flatbreads after I had cooked it, and I added a wonderful garlic-based seasoning mix to the other one before cooking it. Honestly, it tasted like a mild garlic bread. My husband was around when I was getting these beautiful breads out of the oven, and both of us could not stop eating them! I expected to like the bread, but, truthfully, I didn't expect to be "wowed" by the bread. I was. I was totally blown away by the taste. I am planning on getting another box of this mix so I can make a loaf of bread next time. I miss GOOD bread, and this almond flour based mix would make good bread. The flatbread did not taste like an "almond flour bread" at all. The texture was what one would expect from any old flatbread concoction. The bread was light and airy, as you can actually see in the one picture below.
My husband and I had the bread when it was still warm, and we had to force ourselves to stop eating it! By some miracle, we were able to save some for our kids to try. My son is a picky eater...very picky eater. I wasn't so sure he would like this yummy bread; however, even he had to admit that it was "pretty good." My daughter, who isn't gluten-free but often eats gluten-free because two of us are gluten-free, said that this was the "best gluten-free bread" she had ever had. Those are some pretty nice compliments coming from my kids! The bread tasted just as good the next day as it had the first day. I was going to try to warm it up again, but we ate it before we had a chance to warm it up.
